SOUP OF BEANS Ingredients: 1 Kg. beans lamoni* to pod or 200
gr. If dried, 100 gr. of smoked bacon to small cubes, 1 bunch of chards, 1
onion of medium dimensions, carrot, garlic, pork rind of ham, 100 gr of pasta
for “minestrone”, salt, pepper, Olive Oil. Preparation: Lightly fry the onion and carrot
together the garlic and the bacon. Add the chard and dry them, half of the
beans boiled previously for 15 min together with the pork rind in the
Pressure cooker. Add then the rest of past beans with the water of cooking.
When the whole will begin to boil add the oil the salt and pasta |
