RECEIPES OF CARLETTA

 

SOUP OF CANELLINI BEANS

Ingredients: (4 people)

350 gr. of beans canellini, 100 gr of pink Shrimp or 50 GR of Bianchetti, 1 small bunch of red radicchio cut thin, 1 white onion, 1 sprig sage, 1 vegetable stock cube, salt and pepper

 

Preparation:

 

Boil the canellini, previously soaked in water for 12 hours, a pressure cooking pot with a sprig sage and a vegetable stock cube and then drain the sieve. Lightly fry the onion, chopped finely, add the past canellini with their cooking water and cook at low fire 30 min along. Boil just a bit the prawns and deshield them. At the time to Serve the soup, add the shrimp or during the season Bianchetti, adjust the salt and pepper, to unite to taste 1 tablespoon olive oil and sprinkle the soup with radicchio. In the summer season, the radicchio may be replaced by rucola.
