VEGETABLES STUFFED AT GENOA’S STYLE Ingredients: 1 onion-1 clove of garlic, 150 gr. of minced
meat, 150 gr. of minced mortadella, 200 gr. of ricotta-2 egg yolk, marjoram, parmesan
cheese. Preparation Brown the onion and garlic
chopped, then add the meat and the mortadella and brown well. Remove from
heat and add the marjoram, Parmesan cheese, the two egg yolks and the ricotta. This mixture is
used to fill onions, peppers and tomatoes raw. Aubergines must be cooked for
5 min in boiling water, then emptied of their flesh to be added to the
mixture described above. The same applies to the courgettes. |
