RECIPS OF CARLETTA

AUBERGINES PIE

Ingredients:

1 roll of puff pastry, 350 gr. of eggplant, 200 gr. of Champignon (or. 100 gr. of Porcini mushrooms), 1 onion, chopped, 2 eggs, 2 tablespoons grated Parmesan cheese, ½ pack cooking cream

 

Preparation:

 

Brown the onion and add mushrooms. Blanch the aubergines in salted water, after having peel and cut in thin slices. Once cooled the aubergines, add them to the onions together with the eggs, cheese and cream. Mix and place them on a baking pan lined with a one sheet of puff pastry. Cook in oven at moderate temperature (approximately 200 °C) for half an hour.
