RECIPS OF CARLETTA

QUICHE OF SMALL ONIONS

Ingredients:

1 puff paste roll, 6 onions clean (400 GR), 60 gr. smoked bacon, 3 eggs, 250 gr. ricotta, 1 tomato tight and mature, grated Parmesan cheese, parsley, nutmeg, salt and white wine

Preparation:

Brown the bacon into cubes in the oil and arrange in a greased pie dish and lined with pastry. With the cooking fund of the bacon, brown onions cut in half lengthwise, cover with the wine and take them to ¾ of cooking. Work so the ricotta and into with the eggs, grated Parmesan cheese, nutmeg and the parsley. Then place the mixture in the pan and cover it all with onions alternating with sliced tomato. Sprinkle therefore with parmesan cheese and cook in oven at 220°c for 40 Min.
