PENS WITH VEGETABLES AND CURRY Ingredients: (2 people) 200 gr. of pens, 1 egg-plant, 2
small courgettes, 1 layer of pepper, 2 tablespoons of tomato sauce, 1 or 2
tablespoons curry (according to strength or the taste), 1 clove of garlic. Preparation: Peel the eggplant, cut into cubes
and leave to drain interspersed with salt for 20 minutes. In the meantime
also dice the pepper and the courgettes. Rinse the eggplant. Sauté in
a fry pan the garlic then add the
vegetables prepared brown them too. Add the tomato, curry and some water
spoon. Cook few minutes. |
