PENS TO SWORD FISH Ingredients 4 people : 300 gr. of pens, 2 ripe tomatoes
skinned without seeds cut to small cubes, 1 slice of swordfish 100hg. about,
a clove of garlic, 2 spoons of botarga, basil and olive oil Preparation: Brown the garlic
with olive oil in a frying pan, then add the swordfish cut into cubes. When
it will be golden add the tomato and cook all for a few minutes. Put the
boiled and drained pens in the pan and add the basil, the botarga and moisten
it all with raw olive oil. |
