PENS TO RED MUSHROOMS “OVULI” Ingredients: (4 people) 300 GR of pens, 2 egg yolk, 150
grams of ovuli for salad, 50 grams of butter, 3 tablespoons of cream, 2
tablespoons of grated Gruyère cheese, salt and pepper Preparation: Clean ovuli and cut them into
thin strips. Cook the pasta and in the meantime prepare in a large dish the
butter mixed with the red of eggs and a spoon of the cooking water. In a
saucepan dissolve the Gruyère cheese in cream. Drain the pasta, mix it with
the eggs and butter, add the cream and sprinkle with the mushrooms and some
pepper. |
