PICKLED RAW SAUCES FOR PASTAS

Ingredients: (first marinade)

 4 ripe tomatoes small, skinned and cut to small cubes, all the aromatic herbs available, 2 cloves of garlic cut in slices, oil, salt and pepper

Marinate all the components mixed together in the refrigerator for some time, then season the spaghetti just

 

Ingredients: (second marinade)

 

2 ripe medium tomatoes, 2 salted anchovies filleted, a pinch of pine nuts, some leaves of basil, 50 gr. of butter, 1 teaspoon capers.

 

Preparation:

 

chop everything and put it in a bowl where will already have been put the butter and capers. Drain the pasta and pour it directly into the mixing bowl.

 

Ingredients: (third marinade)

2 large ripe tomatoes, ½ bunch of rocket, 100 gr. of feta (Greek cheese) or Sardinian fresh chees, 1 tablespoon black olives,

Preparation:

Peel the tomatoes, deprive them of the seeds and cut them in small cubes, add the Feta also cut to small cubes, the rocket cut end, olives and chilli pepper. Season with the oil

 

Ingredients: (fourth marinade) 2 ripe medium tomatoes, 1 layer of yellow pepper, 1 fresh onion, basil, Olive Oil, pepper

Preparation:

Peel the tomatoes, deprive them of the seeds and cut them in cubes with the Pepper, add the onion cut into thin slices and some leaves of basil. Season with the oil and pepper.
