RECIPS OF CARLETTA

COQ AU VIN CARLETTA’S STYLE

Ingredients: ( 4 people)

1 chicken, 200 gr. bacon, 12 small onions, 12 mushrooms champignons, 2 garlic cloves minced, 1 bouquet Guarní (Laurel, thyme, parsley), 4 spoons of Cognac, 1 lump of sugar, 1 spoon of flour, ½ bottle of red wine, olive oil and butter.

Preparation:

Brown the bacon and onions with the butter and olive oil; once the onions are golden withdraw them in a dish apart and in the remaining cooking oil, brown the chicken, cut into pieces and cabbage. Grease a baking dish, place the chicken and process in oven at 180 °C until it is almost tender. Transfer the chicken in a casserole dish by adding: onions, bacon and mushrooms you will have done skip in the pan; flame the cooking grounds of the chicken with cognac, add a tablespoon of flour, the wine, sugar, the bouquet guarní. Place in the saucepan with chicken and cook on a slow fire until the chicken will not have finished the cooking. Before serving, you can sprinkle with chopped parsley according to the taste.
