RUBBIT
WITH ERBS Ingredients:
(4 people) A medium size rabbit cut in pieces, pine nuts, cubes of bacon, 1
tablespoon of flour, 1 "bouquet guarní", 1 cup broth, salt, pepper,
olive oil. Then Prepare a marinade composed of: a white/red wine, a mixture of
chopped garlic, sage (1 leaf), Basil (2 leaves), parsley, thyme, rosemary,
juniper, bay leaves and a sprinkling of cognac. Preparation: Marinate the rabbit for a night. Brown the pine nuts in the oil, bacon
and the rabbit pieces. At half browning overspread, on the rabbit, 1
tablespoon of flour. Browning completed, place the rabbit in a casserole
(possibly of crock) and add the broth and the marinade, continue cooking for
about an hour over a slow fire. |
