ANCHOVIES IN BALSAMIC VINEGAR

Ingredients: (2 persons)

 

200 Gr. of anchovies, 1 tablespoon abundant of balsamic vinegar, oil, salt, pepper, 1/2 bunch of “rucola”* and a small tomato

 

 

Preparation:

 

Dispose the anchovies cleaned and filleted on the bottom of an oven dish, mix the balsamic vinegar with oil and pepper, pour it on anchovies and pass the microwave for 2 minutes to 100% covered, rest for a minute in the microwave, then season with salt and sprinkle with the rucola and chopped tomato, bathe therefore with a little olive oil
