SPAGHETTI TO TROPEA’S
ONIONS AND BOTARGA Ingredients (2 people): 1 Big Tropea’s onion, salt, sugar, olive oil,
botarga Preparation: Dry the onions in a covered casserole
with oil, 1 tablespoon of water and salt. Once the onions are soft add sugar
and slightly candy them together. Dress the spaghetti with onions and
sprinkle with the grated botarga. If necessary add few raw olive oil. |
