TART OF ALMONDS

Ingredients: (for the short pastry)

 

 350 grams of flour, 200 grams of butter, 150 grams of sugar, 3 eggs, Marsala or other wine according to the tastes, grated lemon rind.

 

Preparation: (of the cake of short pastry) knead the whole, and add in last the wine; the mixture must not be too soft. After having manipulated the dough long enough, it is divided in half. One half the available on a cake pan greased on which it has a sheet of greaseproof paper, with the other half are preparing dive.

 

Ingredients: (for the jam of almonds)

 

200 GR of peeled almonds, 200 grams of sugar

 

Preparation: (jam of almonds)

 

Whisk the almonds to obtain a paste uniform, adding some drop of water. In a container is put the sugar with about 100 gr of water, and prepare one syrup by dissolving the sugar, after which it adds the almond paste and amalgamate the mix uniformly. Cool it all and add 2 tablespoons of “Fior d' Arancio”.

“Fior d' Arancio” is a flavor you by in grocery with a strong flavor of orange flowers.
