THE BUTCHERS


In Ivrea, the butchers drew the attention of the authorities. Many provisions were written for them in the statutes. They formed a corporation with two consuls at its head. Therefore no one could practice this trade without belonging to the consulate and swearing to the corporation's statute which couldn't be modidied without the assent of the Private City Council.

The butchers swore to each "Podestà" always to declare the good quality of their goods and not to put any unwholesome meats on the market, not to stuff and swell them in order to give them a better appearance.

Three Sages, on behalf of the "Terziere" (the town-districts), had to brand the weights and set a price for the meat. The butchers' shops were all next to the "Beccaria", a place created by the Town Council as slaughterhouse and market.
