PENS
TO ANCHOVIES Ingredients:
(4 people) 300 gr. of pens, 300 gr. of anchovies, 1 large ripe tomato, 2 small courgettes,
1 tablespoon botarga of tuna or mullet, 1 clove of garlic, oil and basil. Preparation: Clean anchovies and divide in 4 parts. In a frying pan, brown the
garlic and then brown the anchovies and courgettes, cut to' juliennes ".
Boil the pasta, mix it with anchovies and courgettes, then add the tomato
previously peeled, private of seeds and cut to small cubes and the basil.
Sprinkle with botarga and few olive oil. . |
