PATÉ OF HAM ingredients for 4 people: 3, 5 hg
cooked ham, 1 hg. of butter, 2 dl of whipped cream, 1 tablespoon white port,
1 LT of gelatine for garnish. Preparation: whip up the ham to a pulp homogeneous
and no lumps, add it to soften butter up to make it easily workable and
mounted, and then add the port. When the amalgam is ready and no lumps
proceed to the preparation of the mould as described in the recipe of “Paté
of veal liver”. |
