RECIPS OF CARLETTA

STEWED STOCKFISH (Gran mother elisa recip)

Ingredients: 2 people

800 GR of stockfish wet, 1 glass of tomato sauce, 2 or 3 potatoes, 3 salted anchovies, 1 fist of  pine nuts, Liguria’s black olives, capers, garlic and parsley, salt and pepper and a small chili for who likes it.

Preparation:

After leaving the stockfish in water for an entire night and have cleaned and deboned, cut it in pieces big enough. For those in a hurry I suggest to use pressure cooker, in which sauté: anchovies, the pine nuts and the minced garlic. Add then the pieces of dried cod, which leave brown too  for a dozen minutes; in addition the potatoes cut in pieces, the tomato sauce, a half glass of water, olives, capers and parsley. Cook for about 15 min. if the cooking is not yet completed it continues to cook with discovered cooker  and a slow fire doing thicken the sauce. The salt is better adjust it to the end.
