RECIPES OF CARLETTA

 

PENS TO MUSSELS AND COURGETTES

Ingredients: 6 people

450 gr. of Pens, 3 small courgettes, 1 kg mussels, flour, white wine, saffron (saffron), garlic, cream, Basil or courgettes flowers, butter.

 

Preparation:

 

Brown in the butter the courgettes with a clove of garlic, evacuate the garlic and add the mussels, private of the shell, having made blanch previously a part. Melt the flour; add saffron, white wine and a little water. Reducing all purposes to obtain a velvety not too thick. At the time of season pasta, heat the sauce; add one or two tablespoons of cream to pleasure, Basil or zucchini flowers cut in strips.
