Cashew Stir-Fry from Jim Barricks Alcohol-Free Recipes
Vegetarian.

  • v e g e t a r i a n Cashew Stir-Fry 4 servings 3 tablespoons Vegetable Broth 1 chopped onion 1 small chopped green bell pepper 1/2 pound cut-up broccoli 1/2 head shredded cabbage 8 sliced mushrooms 1/2 cup cubed jicama 1/2 cup SAUCE: 1/3 cup soy sauce 2/3 cup water 1 tablespoon cornstarch 1/4 teaspoon fresh grated ginger 1/4 teaspoon white pepper Steam cook Broccoli 5 minutes to tenderize for stir-frying

  • Stir-fry vegetables in order, adding more broth as needed

  • Stir until smooth

  • Pour sauce over vegetable mixture, stirring constantly

  • When sauce has thickened, stir in toasted cashews

Chicken Stir-fry with Thai Green Curry Sauce You will need: 750g boneless chicken cut into thin strips 1 red capsicum, thinly sliced 100g snow peas, sliced if desired 1 bunch spring onions, sliced 1 bunch bok choy, sliced 1 large bunch fresh coriander, chopped 1/2 bunch fresh basil, chopped For the sauce: 1 tin coconut milk 4 kaffir lime leaves 1 tablespoon Thai green curry paste 1 tablespoon palm sugar 2 tablespoons Thai fish sauce Method: First make the sauce by removing the thick coconut cream at the top of the tin and fry this in a saucepan, stirring constantly until it smells fragrant and 'cooked' and the oil begins to separate

  • Add the curry paste and continue cooking, stirring constantly until this also gets that fragrant cooked aroma and once again the oil begins to separate

  • Add the rest of the sauce ingredients (and the rest of the coconut milk) and simmer gently, stirring occasionally whilst preparing the stir fry

  • Next stir-fry the capsicum, snow peas, spring onions and bok choy until soft

  • Stir-fry chicken in batches
