Chicken Stir-fry with Thai Green Curry Sauce You will need: 750g boneless chicken cut into thin strips 1 red capsicum, thinly sliced 100g snow peas, sliced if desired 1 bunch spring onions, sliced 1 bunch bok choy, sliced 1 large bunch fresh coriander, chopped 1/2 bunch fresh basil, chopped For the sauce: 1 tin coconut milk 4 kaffir lime leaves 1 tablespoon Thai green curry paste 1 tablespoon palm sugar 2 tablespoons Thai fish sauce Method: First make the sauce by removing the thick coconut cream at the top of the tin and fry this in a saucepan, stirring constantly until it smells fragrant and 'cooked' and the oil begins to separate
