PENS TO AUBERGINES AND MATURED RICOTTA

 

Ingredients: (4 people)

 

300 GR of pens, 1 middle eggplant chopped and grilled, 2 large tomatoes, ricotta matured thinly sliced, basil, 1 chili pepper, 2 cloves of garlic and oil.

 

Preparation:

 

Brown in the oil the crushed garlic and Chili, add the slices of eggplant grilled, flavor and remove from heat. Prepare in a dish tomatoes skinned, private from the seeds and cut in small cubes.

Boil the pasta and after having dried it and lightly fry in a pan with the eggplant, add then tomatoes cubes, the basil and few oil if necessary.
