ROAST PORK COLD WITH PARSLEY SAUCE
Ingredients: (4 people)
Ingredients for the roast: 600 gr. of arista of pig lean boneless, 1 onion, 1 carrot, 1 glass of white wine, a bouquet guarnì, salt and pepper in grains.
Preparation of the roast:
Put the arista salt and tray greased in a baking dish; add the onion and carrot in pieces, the bouquè, the grains of pepper and the white wine. Cover the pan with tin film. Put it in hot oven already 180°c for 20 min, and cook for 16 min. (6 min for every hundred grams of meat). Cool the roast and slice it thin.
Ingredients the sauce: 1 bunch of parsley, 1 chilli pepper private of seeds, 2 pickled gherkins, 1 tablespoon capers, 1 anchovy salt, the crumb of a small bread.
Preparation for the sauce:
Put in a blender the onion and the carrot cooked with roast. Filter the cooking sauce of the roast, with this wetting the crumb of sandwich and add it in the blender together with the parsley and the other ingredients. If the sauce was too thick, add some tablespoon oil.
